The Sake List, Reconsidered
We rebuilt the sake flight around one rule: every pour has to stand up to broth. Junmai, with its fuller rice profile, carries a rich tonkotsu better than the polished, delicate daiginjo most guests expect first.
The house flight now moves from a dry Yamagata junmai through a nigori that lands like dessert. Ask for the card at the counter — each pour lists the brewery and the dish we would pair beside it.
Highballs stay on the list. Jasmine tea, house shochu, yuzu — the flight ends where the night should.
