Why Our Rice Matters
Every donburi stands on rice, so the rice gets the same attention as the broths. We use koshihikari from a Sacramento Valley grower — the closest climate in the country to Niigata — washed until the water runs clear and cooked in small batches through service.
The difference is texture: each grain holds its shape under the tare and the toppings, never dissolving into the bowl. A donburi should finish with rice that still tastes like rice.
It is a small thing. Most of cooking is small things, repeated carefully.
